Carribean Bulghur Stew

Has it really been a year since I posted anything to livejournal? Wow.

Olive Oil
2 Small Leeks, sliced
2 Small carrots, chopped
4 cloves garlic, minced
1/2 tsp ginger, minced

1 Small Sweet Potato
2 Poblano Chilis, diced small
1/4 Red Bell Pepper, diced small
Handful Pistacios
2 small spoons orange juice concentrate
1/4 cup water
2 15 oz cans black beans
Salt to taste

3 mandarin oranges
1 cup Bulghur

I wanted to use Serrano peppers; but they were sold out; evidently popular with the superbowl crowd.
